Two of the most well-regarded practitioners of Thai cooking, David Thompson and Andy Ricker, do an interview with Portland Monthly in which they discuss authenticity and cooking food from a culture you didn't grow up in. Says Thompson: "There is an intrinsic or innate capacity of taste if you are Thai or have grown up in that culture, and it's very hard to train others in the subtleties of the cuisine.
