Noma chef René Redzepi and the organizers of MAD have released a preliminary list of speakers for their second annual symposium (see Eater's report from the event last year). Among those confirmed to speak — half of the final lineup, according to an email sent to friends and attendees — are Ferran Adrià, Massimo Bottura, Fergus Henderson, and Enrique Olvera. It all goes down the first weekend of July in Copenhagen, Denmark.
This year's symposium will center around the word "appetite," which "has been chosen due to its evocative meaning and fundamental importance to our work as chefs," according to Redzepi's message. "We would like the audience to consider its myriad of meanings as well as its implications for both our professions and our lives."
April will see the release of the full program and "a deeper explanation of the theme."
