Chicago chef Paul Kahan, the man behind Avec, The Publican, Blackbird, and several other projects, will debut Publican Quality Meats next month. According to a recent release, PQM will serve food between 10 a.m. and 6 p.m. and offer a variety of charcuterie, house-cured sausages, artisan sandwiches, prime beef and pork and other products.
