Eric Ripert has announced that Laurie Jon Moran will replace Michael Laiskonis as pastry chef of New York's Le Bernardin. Before taking the gig, Moran held pastry positions at Per Se, Daniel, and Oxford's Le Manoir aux Quat'Saisons. Laiskonis, who left his post last month to pursue other interests, is widely regarded as one of the city's best pastry chefs. [Diner's Journal/NYT]
