Thanks to Momofuku's David Chang and culinary tech wizard Dave Arnold, New York will have an answer to progressive cocktail bars like The Aviary and 41 Degrees. It's called Booker & Dax and it will occupy the Bar Bar space at Momofuku Ssam. Arnold insists he won't be in the business of "pushing outside people’s comfort zones" when the bar opens on Friday.
