The California Foie Gras Ban

foie-gras-cans-150.jpgIn light of an upcoming July 2012 ban on foie gras, California chefs are reacting in different ways. Some say there's a need to fight the ban, like people did during the Chicago ban of recent years, by serving more dishes with the ingredient. Some, like Thomas Keller, are more resigned to the ban. And some chefs, like La Folie's Roland Passot, think the food will go underground: "The foie-gras lovers will get their fix somewhere, somehow." [Bloomberg]
