The Curse of the Signature Dish

danks-street-depot-150.jpgThe Sydney Morning Herald talked to several Australian chefs who had the audacity to remove popular items off menus only to learn they're not really in charge of their menus. Said Jared Ingersoll of Danks Street Depot in Sydney: "I would have a table of four that would come in, queue for half an hour to come in the door...They didn't want to see the menu, they wanted four chicken sandwiches. Then [when it wasn't on the menu] they'd walk out." That happened five times before said sandwich was back on the menu for good. [SMH]
