In this clip from the Cooking Channel's Food(ography), Russell Moore — Chez Panisse alum and chef/owner of Camino in Oakland — breaks down a whole lamb (like a boss) and cooks it in an open hearth.
Towards the end he addresses the whole fig-on-a-plate, East Coast-West Coast rivalry: "The big slam on Californian cuisine that we don't have any technique, but we have really great stuff. That it's just shopping. I'm cool with that."
