It's a Top Chef kind of day: earlier today was Michael Voltaggio, and now banana scallop practitioner and Top Chef All-Star winner Richard Blais told Eater Atlanta about his upcoming restaurant there: it will be called The Spence. No ten-course tasting menus, but instead dishes like Dover Sole with Brown Butter Foam and Kumquat Chutney, a Prime Steak cooked sous-vide and finished on a wood burning rotisserie, handmade pastas, and cheeseburgers. The award-winning architecture firm Johnson Studio is to design the space; the target opening date is Winter of 2011.
