José Andrés was on the Today Show to promote his new America Eats Tavern pop-up in DC. He explained that he used recipes from the original Joy of Cooking because its author "Irma [Rombauer] spoke to me." He also had some pointers on how to know when your clams are done cooking: "You can say to things, clam, are you good or are you not good?" Apparently it's better if they don't answer.
