Longtime Chez Panisse chef and cookbook author David Tanis will retire at the end of the summer to pursue his writing career, including a new column for the New York Times. Tanis has already written two cookbooks, one of which, Heart of the Artichoke, is nominated for a Beard Award this year.
No word yet on owner Alice Waters' plans to replace him, but Tanis' co-chef Jean-Pierre Moulle will remain on staff. Moulle and Tanis have been trading off kitchen duties every six months for the past several years; Tanis spends the other six months of the year in Paris working on his writing.
