The Butcher's Guild is a new trade organization for butchers. Designed to be a "support network," the guild "includes some of the most experienced and well-respected professionals in the fields of butchery, meat curing and whole animal cooking." Charter members include Brad Farmerie (Public, NYC), Adam Kaye (Blue Hill, NY), Ryan Farr (4505 Meats, SF), Chris Cosentino (Incanto, SF), and Jamey Lionette (Boston).
