Nightline is airing a Platelist segment with Boston chef and restaurateur Ken Oringer tonight, barring any breaking news, etc. Oringer, owner of restaurants that include Clio, Uni and Toro, will discuss, among other things, the challenges of staffing his restaurants and how a self-described "white guy from New Jersey" can pull off cooking Japanese, Italian, Spanish and Mexican food.
In an interview, Oringer says the stress of restaurant life doesn't bother him as much as the staff turnover. "Once people get good, they move on to bigger and better things."
