Next, the heavily-anticipated new restaurant from Grant Achatz, is now officially open. Emails started going out this morning inviting the nearly 20,000 people who signed up for the restaurant's mailing list to buy tickets to the restaurant's first concept, which focuses on Paris in 1906. (The restaurant's theme will change every three months; next up, Thai street food.) In the video below, the staff of Next polish glasses, smooth tablecloths, and plate up some Escoffier-inspired cuisine.
