New York chef Wylie Dufresne gave a TEDx talk in which he explained how his curiosity as a cook helped him to develop dishes like an all-egg ravioli and fried hollandaise.
Then, at the end of a slideshow of egg dishes from his restaurant, wd-50, he waved a hand at the screen and said: "Forget about these cool dishes. The end result is that we now learn more. We now understand more. We're getting better as cooks." Here's the video:
