Raw Milk Cheese Safe For Now

raw-milk-150.jpgArtisanal dairies that produce high-end raw milk cheese can relax: rumors that the FDA would increase the number of days required to age raw milk cheese were greatly exaggerated. Raw milk cheeses are currently required by law to be aged at least 60 days; but much longer than that and they can begin to "take on ammonia flavors." Yum? [Atlantic]
