Colbert Impressed by Nathan Myhrvold's Modernist Cuisine

Nathan Myhrvold went on The Colbert Report last night to promote his gigantic cookbook · Modernist Cuisine, and, in the video below, Stephen Colbert wants to know "Why would a man who has all the options in the world do this to food, for fun?" After all, "God ordained that things should be boiled or baked or fried. Those are the missionary positions of cuisine."

And it seems like Colbert is actually kind of into what Myhrvold's doing. After trying the pistachio ice cream made without milk or eggs, Colbert says, "You've achieved ice cream that tastes like ice cream, that's a true breakthrough!"
