Inside the Top Secret Momofuku Test Kitchen

Late Night with Jimmy Fallon managed to get inside David Chang's top-secret Momofuku Test Kitchen, where Chang and company test recipes for the Momofuku restaurants and get to "make mistakes." This is the first time cameras have ever been allowed inside the kitchen. According to a masked Chang, the test kitchen is located "Just outside of New York City. In Weehawken, New Jersey. Montreal. In the Tri-State Area. It's a mobile space. We're in Ozone Park. Sometimes we're in the back of an ice cream truck." Well, that clears it up.

So what exactly is going on in there? They're working on brewing their own soy sauce, making freeze-dried ice cream, and also trying to figure out "what in the hell is American food."
