Grant Achatz Demos His New Duck Press at Next

Chicago chef Grant Achatz has all kinds of news toys for his upcoming restaurants, Next and Aviary. For the former, he procured an antique duck press, and watches gleefully while Next chef Dave Beran uses it to make a sauce in the video below. Then it's over to Aviary, where Achatz inspects the new custom-built bar stations with chef Craig Schoettler. It's like Christmas, but for three Michelin-starred chefs!
