Atlanta chef/Top Chef All Stars winner Richard Blais stopped by Late Night With Jimmy Fallon Friday night to make a Whiskey Sauerkraut — that is, a Whiskey Sour made with sauerkraut juice. Why? "There's just not enough cocktails with sauerkraut juice." Clearly not. Also, since Fallon criticized Blais when he was a judge on Top Chef for "not using enough lasers and smoke and all that," Blais brings the full-on molecular gastronomy tool kit: sous vide, meat glue, and, naturally, liquid nitrogen. Said Fallon, after not using any gloves or hand protection while splattering liquid nitrogen everywhere, "We made ice cream!" Said Blais, "We made a mess."
