Here's Georgia chef/official Canadian Hugh Acheson stopping by Google (again) to promote his new book, A New Turn in the South, and explains why he was drawn to Southern food: it's all about depth of history. He admits the Pacific Northwest — especially Portland — has a lively food scene, but it's fairly new, and well: "It's all kind of nascent. It's...Portlandia-ish." But...but... California cuisine? "Name one California dish before Wolfgang Puck and Jeremiah Tower." Okay, but surely New England — "Same thing." Fine. You win this time, Acheson.
