Here are Homaro Cantu and Ben Roche of Chicago's Moto giving a TEDx presentation on the power of food alchemy. Turns out the two once challenged the staff of Moto to go off foraging in Chicago, bring what they found back into the restaurant, cook it, and "have everybody flavor trip on it at Moto. Let's charge 'em a boat load of cash for this and see what they think." Turns out they thought pureed hay and crabapples were barbecue sauce. The duo then makes an argument for using this method to turn traditionally inedible but nonpoisonous foods — like hay and crabapples — into resources.
