French Laundry/Per Se chef Thomas Keller is fine with having just two fine dining restaurants, thanks: "My feeling is two fine dining restaurants is probably the maximum any chef could have...when you think of what we do, it's about the individuals and the teams in the restaurants. We have an extraordinarily strong and dedicated and talented team and I'm not sure that I'd want to try to extend myself beyond those two markets to try to do another fine dining restaurant...It kind of cannibalizes them."
