Seattle chef, winner of the 2009 James Beard for Best Chef Northwest and formerTop Chef Masters contestant Maria Hines has announced plans for a second restaurant: Golden Beetle. (Hines also happens to be the chef that had to compete against an extremely odd fish and chips dish from Masaharu Morimoto on Iron Chef America.) The new restaurant will feature Middle Eastern foods, and Hines is currently eating her way through the region doing research. Golden Beetle will open in February in Seattle, where Hines already owns one restaurant, Tilth.
