Today Eatocracy reveals how Thomas Keller's Per Se and Daniel Boulud's Daniel hire and train their servers. Typically, each restaurant gets around 80 to 100 resumes a day, of which they may call five applicants, interview two of them face to face, and bring one in to trail. Per Se GM Anthony Rudolph explains: "We recruit very heavily and not because we’re looking to fill positions...You just never know when the right person is looking, so we look continuously."
