Grant Achatz Suprised People Scoff at Molecular Gastronomy

Following Friday's anti-molecular gastronomy post, Epicurious interviews Alinea chef Grant Achatz and asks: "Why do you think the gut reaction for so many people is to scoff at dishes you and your colleagues create?" To which Achatz responds, "Do they? It's funny you say that when the top restaurants in the world for many years running have embraced this style of cooking."

Other tidbits: Achatz says that his taste is better than it was before cancer, that the next big thing in food is "time travel," and that a movie version of his life story "is in the works and will happen."
