Aviary's Old Fashioned in the Rock

Time for another futuristic cocktail from your friendly neighborhood bartenders, Grant Achatz and Craig Schoettler of the forthcoming Aviary in Chicago! This time, they are tackling the Old Fashioned. Scoettler fills water balloons with water and then puts them in a device called a blast chiller; this causes the outer layer of the water to freeze before the inside. The liquid is then drained and the resulting hollow ice cube is refilled with an Old Fashioned cocktail. The customer receives the egg-shaped, booze-filled ice in a glass and cracks it open with a spoon. The resulting drink is called an Old Fashioned in the Rock. Oh, we see what you did there! Very clever, guys.
