New York chef Amanda Cohen won the $10,000 prize in the PETA "faux gras" challenge to create a vegan foie gras substitute. The mushroom mousse from her restaurant Dirt Candy was voted the most similar "in taste and texture to real foie gras." Which means that somewhere there is a guilt-ridden panel of PETA-selected judges who ate some foie for the sake of comparison. [TONY, PETA]
