This Wall Street Journal piece is largely French chefs like Alain Ducasse and Alexis Gauthier touting Alice Waters' rhetoric, and while it's nice that Michelin-starred chefs are interested in preparing healthier, seasonal options, perhaps they ought to ask José Andrés how scary that can be before they commit themselves fully.
