José Andrés on Liquid Nitrogen, Why He's Afraid of Alice Waters

Washington DC chef and vegetable lover José Andrés held court at Google's DC offices the other day and covered a lot of ground: He discussed his volunteer work in Haiti, what it takes to be happy as a chef, and played a demonstration video to tout liquid nitrogen, complaining it's been misrepresented in the press. He also revealed that he's scared of Alice Waters: "Every time she comes to the restaurant, I'm scared. I'm like, where is this asparagus coming from? 'Oh, it came from Mexico.' I'm like, holy cow. Okay, tell her we have no asparagus."
