Dutch scientists have developed an artificial tongue that can detect "the optimal aroma and texture properties" of food. They're using it to develop low-fat foods that have a high-fat mouth feel, but surely chefs will figure out culinary uses for it in addition to its intended commercial and nutritional ones.
