Chef Michel Nischan was on NBC Nightly News last night discussing his Wholesome Wave program, which seeks to make farmers markets accessible to low-income families. Now available in 15 states with 3 more coming soon, the foundation raises funds to provide monetary incentives for families on food stamps to shop at farmers' markets, enabling them to purchase healthier food. Nischan describes it: "You know what? Buy whatever you want. But if you buy fresh fruits and vegetables, locally grown, you get double your money." Not a bad deal.
