Chef/restaurateur/television personality Emeril Lagasse dropped by the Late Show with David Letterman the other day to promote his latest cookbook Farm to Fork: Cooking Local, Cooking Fresh which David Letterman amusingly had a hard time pronouncing, closely evading the censors. After a serious start in which they discussed the ecological nightmare that is the oil spill in the Gulf Coast — "Oysters are gone," intoned Lagasse, "We had Katrina, we had Ivan, we're just getting on our feet, and now this thing is happening." — Letterman eased into antics, boozing it up and asking Lagasse how he manages his empire, "How can you run a dozen restaurants? You gotta be in every restaurant every night, or the staff will steal you blind."
