Esquire's Eat Like a Man blog will run a behind-the-scenes interview with Top Chef guest judge Eric Ripert after every episode this season. In the first installment, Ripert tells them deliberation can take two to three hours. He also says, "I have zero connection with the candidates, except when they present their dish," and that since he has "absolutely no clue" whether or not they're good people, judgments are based purely on the food.
