Tedious Alinea Menu Meetings Reveal Achatz's Perfectionism

One of the challenges for Grant Achatz and his team at Alinea is coming up with original presentations for their food. In this video of an Alinea menu meeting, Achatz says that he can look at a dish and tell if it's "Charlie Trotter 1995,” "Thomas Keller 2001," or "Ferran Adrià 2006.” Achatz also remarks, "It makes me wonder if we shouldn't have someone, in a way, like, scanning all the restaurants within the city, avoiding what everyone else is doing?"
