7X7 asked a group of NYC chefs who moved from San Francisco about their thoughts on the differences between the two cities. While the many agree with the idea that SF chefs care more about ingredients and NY chefs care more about technique (as summed up eloquently in David Chang's infamous "fig on a plate" remark), Pulino's Chef Nate Appleman had this to offer: "There's a lot of confidence—you just have to worry about what you're doing, [whereas in San Francisco] there's too much concern about what everyone else is doing."
