David Chang on the Late Show With David Letterman

Last night David Chang was a guest on the Late Show With David Letterman. Letterman tends to taunt his guests that come on to do cooking demos, and last night was no exception: Letterman planted a cigarette butt in a mussel shell, talked about the mob delivering Chang's linens, pretended to be repulsed by rice fries, and even asked Chang if he "ever used that aerosol cheese." Chang, the consummate professional, never once got tripped up. Said Letterman: "You have five restaurants in New York? If I go in there, will you pick up the check? Because this is not free, it's television, we're trying to make a living here."
