We, The Pizza Opening Soon, Spike Eyes National Expansion

Bloomberg catches up with former Top Cheffer Spike Mendelsohn today and gets some juicy details on his newest project, "We, the Pizza." Spike's second restaurant is set to open mid-April, and will serve New York-style pizza, with (surprise, surprise) an emphasis on "regional, farm-fresh ingredients." The new place will offer your average mozzarella and pepperoni pizzas by the slice or whole pie, as well as pizzas topped with things like a creamed spinach, potato and pancetta, and shaved truffles and bechamel. Spike notes that he visited NYC's Emporio, (the recently departed) Una Pizza Napoletana, and Michelle Obama fave Grimaldi's for inspiration.

The rest of the menu will be rounded out by pasta dishes and "Italian-deli style" sandwiches, and for dessert homemade gelati and italian sodas, including the "Love You Long Time Lemon Lime". The new spot will have 90 seats, offer takeout and sit down options, and fill out three stories in a space right next door to Spike's first place, Good Stuff Eatery.

But it sounds like Spike has a few more tricks up his fedora. He's currently looking to expand Good Stuff to new locations in the D.C. area, and has singled out possible expansion plans for Baltimore, Arlington, Virginia and Georgetown. But an even greater expansion might be on the horizon. Says Mendelsohn: “I’ve gotten offers to open Good Stuff in Chicago, L.A., even London and Tokyo.... When the time is right, I’d love to go national, even international.” It's great to be ambitious, Spike. But if you want to take this operation global, these pizzas better be good.
