In an interview with the Star today, chef Scott Conant revealed some new info about the Toronto location of Scarpetta, set to open in late May. A few classics from the NYC and Miami restaurants will be offered—like his famous spaghetti al pomodoro— and though Conant remains pretty tight lipped about the rest, it sounds like the majority of the menu will be new dishes. He notes: "We need to sit inside the space, throw some opening parties and see what people want."
The space inside of the the new Thompson Toronto Hotel will seat 150, with design by Studio Gaia of New York (the team behind the NYC location). The restaurant will be open for lunch and dinner, no white table clothes. Conant signed a multi-year management contract with the hotel, and he mentions that he might send the chef de de cuisine at his newest NYC spot, Faustina, to head the kitchen. The chef, Ryan Morrison, is a native of Toronto.
