2010_12_paella.jpgThe new Cosmopolitan hotel in Las Vegas is now just over a week old, and all sorts of bigwig chefs claimed prime real estate. Jose Andres debuted Jaleo, his tried and true Spanish tapas spot from DC, in addition to a completely new Chinese/Mexican combo known as China Poblano. My Last Bite hopped a plane for the venue's opening party and recounts her entire experience from Jaleo's massive paella-making station to Salt-Air Margaritas and an open-air dumpling steaming depot at CP.
