The Future of the Cooking Lab

maxime-bilet-150.jpgWhen asked about his future plans, Maxime Bilet, co-author of megacookbook Modernist Cuisine, hints that the book's research kitchen, The Cooking Lab, will remain open after the book's publication: "First I think I’ll sleep for a few weeks and not think about the book or recipes for as long as I’m capable...After that the future is open. There are many very meaningful and important things I feel we can do with Nathan [Myhrvold] and the lab and it will be interesting to see where that takes us next." [Best Emerging Chefs]
