Chef Ferran Adrià, mercurial eminence gris of elBulli, announced last week that starting January 2011, his team would be introducing 110 new items to the menu at elBulli. "All the innovations at the [experimental laboratory] Taller haven't been included yet," he said at the Gastronomika conference, "we haven't used them because we know we'll be tired."
He went on to explain this is the first time elBulli is operating without their traditional six-month siesta. The restaurant, which is closing for ever in 2011, will be open continuously from July 15th, 2010 to July 31th, 2011 with no break. "This is the first time we're doing this," said Adria. Of course, this last sprint to the finish mightn't have that many real world implications for you, dear diner. Seats are booked sempiternally.
