Harvard's Food Science Class Is Popular

andres-adria.jpgIt turns out that "Science of the Physical Universe 27" is the hottest course at Harvard this fall. Also known as "Science and Cooking: From Haute Cuisine to Soft Matter Science," 700 students applied for 300 spots and the university held a lottery. The class meets twice a week: one day a physics professor explains the scientific principles, the other guest chefs — including Ferran Adria, Jose Andres, Wylie Dufresne, and Grant Achatz — drop by to lecture on how "that principle inspires cooking."
