José Andrés Continues Playing Professor at Harvard

The Harvard Science & Cooking Lecture Series posted a whole slew of lecture videos on YouTube, covering topics from browning meat to oil viscosity to chocolate. Among them is the following video of chef José Andrés returning to Cambridge to lecture on gelatin. After covering the history and some techniques, Andrés moves on to avant garde applications. He discusses his struggle to create a hot gelatin, which he describes as an "orgasm of flavor in your mouth." He also apologizes for showing a video of a strawberry dish when strawberries are out of season.
