Despite having an original ETA of 2008 and being located within the bowels of the ill-fated Gansevoort South Hotel (which is set to be auctioned in foreclosure sale this month), the long-awaited STK Miami will finally roll out today, making it the fourth STK location overall. For the most part, it's the same modern steakhouse deal (foie gras french toast, Big Mac sliders) as its counterparts in NYC, LA and Vegas, but with a few new Florida twists. Also, set in the midst of South Beach, STK Miami is already fitting in nicely to the SoBe show: its walls are purple, Fergie has already been in, and the motto is "Not your daddy's steakhouse." More restaurants should have mottos.
