French Laundry Dessert Whiz Resurfaces in Chicago

Yountville/Chicago: It's got to take a lot to leave the friendly confines of Kellerville, but that's just what (now former) French Laundry pastry chef Patrick Fahy did. This week, it was announced that Fahy has stepped into the head pastry chef position halfway across the country at Paul Kahan's Blackbird in Chicago, where he's already overhauled the dessert menu and is talking about wackiness like fruit foccacia. Meanwhile, back at Keller HQ, Courtney Schmidig is going on four years at the Laundry and has been holding down the head pastry chef gig since '08.
