The Year in Eater annual survey is right around the corner, but first, The Wall Street Journal files its year-end retrospective. Joël Robuchon gets recognition for the best new dish of the year with his crab-urchin-cauliflower concoction, Pagliolaia ("the dewlap or flap that hangs down from the jowls of the steer") is the best new exotic ingredient, and the top three newcomers are NYC's A Voce Columbus, Oakland's Commis and the Heartland's June.
