In the Huffington Post, onetime Gourmet writer Louise McReady muses on the state of modern French cuisine in Europe and in America with a number big-name chefs in France: Iñaki Aizpitarte (Le Chateaubriand), William Ledeui (Ze Kitchen Galeriel), Yves Camdeborde (Le Comptoir du Relais), and Le Fooding co-founder Alexandre Cammas.
In addition to touching on the French tradition of horsemeat (don't look at the post below this one) and the best food cities in the world (non-shocker: they like Paris, "the world capital of gastronomy"), the chat turns to the Frenchmen's favorite foreign and local chefs. Interestingly enough, three of the four name David Chang as the American chef they most admire, while the other (Camborde) chooses the one and only Daniel Boulud.
