Chef René Redzepi of the Michelin-starred Noma in Copenhagen, Denmark has long hosted students, interns, and young cooks in his kitchen/laboratory on Saturday nights for something like a cross between a study session and culinary presentation. His Saturday Night Projects, as they are called, were the subject of his book René Redzepi: A Work in Progress. Now, here's a look at a Saturday night session, in which Redzepi explains his motivation for hosting these educational workshops: "You know, I've been trained to believe that there's a head chef, and he's sort of a despot of the kitchen, the number one ruler. That's the way it's always been, that's the way I was trained. That's something I don't want in my place. The Saturday Night Projects was sort of a reaction against that.... It's a training camp for intuition and the sharpening of our sensibilities."
