New York City's Estela — which made it onto Bon Appétit magazine's list of the best new restaurants of the year, earned a James Beard nod, and is a favorite of the President and First Lady — is the subject of the newest video from Nowness, produced by James Casey (Swallow Magazine) and Luis Álvarez y Álvarez.
Watch chef Ignacio Mattos, who hails from Uruguay, reconstruct a comforting dish of fish and mashed potatoes using produce from a local greenmarket. Says Casey of Mattos' style: "What's interesting about the food is that it's deceptively simple yet there's a restraint and elegance to it. It takes its inspiration from many places but ends up being very New York."
